I Thought Something Was Wrong With My Pizza Until I Discovered the Surprising Reason Behind Those Strange Bubbles

Posted on May 7, 2026 | Food & Lifestyle

After a long and exhausting day, all I wanted was a peaceful evening and a freshly delivered pizza.

Nothing special. Just a comfortable place on the sofa, my favorite movie, and something delicious to enjoy without worrying about work or household responsibilities.

By the time the delivery driver finally arrived, I was already looking forward to relaxing.

I thanked him, carried the pizza into the kitchen, and placed the box on the counter.

The familiar aroma of melted cheese, warm tomato sauce, and freshly baked dough filled the room.

Everything looked perfect.

Or at least, that’s what I thought.

When I opened the box, I noticed something unusual about the surface of the pizza.

There were several strange-looking bubbles scattered across the cheese and crust. Some were small and round, while others appeared slightly larger and uneven.

A few had risen above the surface, creating little golden pockets.

I leaned closer.

At first, I wondered whether something had gone wrong during preparation.

Had the cheese spoiled?

Was the dough reacting strangely to the heat?

Could the pizza have been exposed to something unusual during delivery?

I had never paid much attention to the appearance of pizza before, but these little bubbles certainly caught my attention.

I picked up my phone and took a photograph.

Then I looked at the pizza again.

The more I examined it, the more curious I became.

I decided to find out what those strange bubbles actually were before making any assumptions.

Why Does Pizza Develop Strange Bubbles?

As it turns out, bubbles on pizza are often a completely normal part of the baking process.

Pizza dough contains yeast, which produces carbon dioxide as it ferments.

During fermentation, tiny pockets of gas develop throughout the dough.

When the pizza enters a hot oven, the heat causes these gas pockets to expand.

The result is a dough surface that can rise in different places, sometimes creating large or small bubbles.

This is one reason why freshly baked pizza can have such an interesting texture.

The bubbles are especially noticeable in pizzas made with dough that has undergone a longer fermentation process.

During that time, the yeast and natural enzymes help develop the dough’s flavor and structure.

When the dough is eventually baked, the trapped gas expands and creates the airy texture many pizza lovers enjoy.

In other words, those unusual shapes might not have been a problem at all.

They could simply have been evidence of how the dough had been prepared and baked.

The Science Behind Those Golden Pockets

There is another interesting reason why pizza develops bubbles.

It has to do with the way heat moves through the dough.

When pizza enters a hot oven, the outside begins heating quickly.

Moisture inside the dough turns into steam, while the carbon dioxide produced during fermentation also expands.

These gases create pressure within the dough.

If a section of dough stretches more easily than the surrounding areas, it can rise and form a visible pocket.

Sometimes the bubble remains small.

Other times, it grows into a large dome.

The final appearance depends on several factors, including:

  • Dough hydration: Dough containing more water can develop a different texture and may form larger air pockets.
  • Fermentation time: Longer fermentation can influence the structure and flavor of the dough.
  • Oven temperature: High baking temperatures encourage rapid expansion.
  • Dough handling: The way the dough is stretched and shaped can affect how gas pockets are distributed.
  • Toppings: The amount and distribution of cheese, sauce, and other ingredients can influence how the surface bakes.

This explains why two pizzas prepared with similar ingredients can look surprisingly different.

One may have a relatively smooth surface, while another develops several prominent bubbles.

Neither appearance automatically indicates a problem.

Why Some Pizza Crusts Have More Bubbles Than Others

If you have ever compared different styles of pizza, you may have noticed that some crusts are much airier than others.

For example, certain traditional Neapolitan-style pizzas are known for their light, expanded edges.

The outer crust, often called the cornicione, can develop large
